  • 2 Tbs. oil
  • 300g boneless chicken cut into small cubes
  • 1 small onion cut in eights
  • 1 Red capsicum, cut into cube
 
  • 2 small carrots, sliced
  • 100g snow peas, halved
  • 225g pineapple, diced
  • ½ cup sweet & sour sauce



  1. Heat 1 Tbs. oil in a wok on high heat and stir-fry chicken in batches until golden brown and cooked through. Remove and keep aside.
  2. Heat 1 Tbs. oil and add the veggies and pineapple and stir fry for 2 min. or until the onion has soften slightly.
  3. Return the chicken to the wok, add the sweet & sour sauce and toss well to coat and heat through.
