  • 2 Pkt. Noodles
  • 300g mixed vegetables
  • 4 eggs lightly beaten
  • cup milk
  • 2 chopped onions
  • ¾  cup grated cheddar cheese
 
  • 2 Tbs. chopped dhania / coriander
  • 1 finely chopped tomato
  • 2-3 chopped green chilies
  • Salt to taste
  • Pinch of pepper
  • 1 Tbs. oil



  1. Pre-heat the grill at 200˚C for 5 min.
  2. Prepare the noodles as per instructions on the packet. Drain and keep aside.
  3. Boil the mixed veggies (half-cooked) the mixed veggies can be peas, carrot, French beans (finely chopped).
  4. Drain the water and ½ mash the veggies.
  5. In a large bowl, combine the veggies, noodles, eggs, milk, tomatoes, cheese, dhania, salt and pepper. Mix well.
  6. Heat the oil in a large frying pan. Transfer the mixture into the pan spreading the mixture evenly. Grate some more cheddar cheese over the mixture covering it completely.
  7. Cook over medium heat for 3-5 min or until the bottom is golden brown. Do not turn the omelette.
  8. Place the frying pan immediately under pre-heated grill for 3-5 or until the top has set and is slightly golden.
  9. Cut into wedges and serve with sauce and green salad.
