- 2 Pkt. Noodles
- 300g mixed vegetables
- 4 eggs lightly beaten
- ⅓ cup milk
- 2 chopped onions
- ¾ cup grated cheddar cheese

- 2 Tbs. chopped dhania / coriander
- 1 finely chopped tomato
- 2-3 chopped green chilies
- Salt to taste
- Pinch of pepper
- 1 Tbs. oil

Pre-heat the grill at 200˚C for 5 min.

Prepare the noodles as per instructions on the packet. Drain and keep aside.

Boil the mixed veggies (half-cooked) the mixed veggies can be peas, carrot, French beans (finely chopped).

Drain the water and ½ mash the veggies.

In a large bowl, combine the veggies, noodles, eggs, milk, tomatoes, cheese, dhania, salt and pepper. Mix well.

Heat the oil in a large frying pan. Transfer the mixture into the pan spreading the mixture evenly. Grate some more cheddar cheese over the mixture covering it completely.

Cook over medium heat for 3-5 min or until the bottom is golden brown. Do not turn the omelette.

Place the frying pan immediately under pre-heated grill for 3-5 or until the top has set and is slightly golden.

Cut into wedges and serve with sauce and green salad.
