- 2 Tbs. oil
- 300g boneless chicken cut into small cubes
- 1 small onion cut in eights
- 1 Red capsicum, cut into cube

- 2 small carrots, sliced
- 100g snow peas, halved
- 225g pineapple, diced
- ½ cup sweet & sour sauce

Heat 1 Tbs. oil in a wok on high heat and stir-fry chicken in batches until golden brown and cooked through. Remove and keep aside.

Heat 1 Tbs. oil and add the veggies and pineapple and stir fry for 2 min. or until the onion has soften slightly.

Return the chicken to the wok, add the sweet & sour sauce and toss well to coat and heat through.
